This easy shortbread recipe was past down to me. With just four ingredients and 20 minutes you'll have these perfectly sweet little buttery biscuits. A great quick dessert to take to any special occasion.
You will need;
2 Tbsp Castor Sugar
2 Cups Plain Flour
(Strawberry Jam or Lemon Curd to serve)
Mini cupcake patty cases
Pre-heat oven to 180 degrees (fan-forced).
Using an electric mixer beat butter and sugar until creamy and pale.
Fold in one cup of flour, mix, then add the remaining cup of flour.
On a baking tray layout your patty cases, then spoon a teaspoon size ball (not rolled), into each patty case.
Bake for 20mins (or until very lightly browned).
Allow to cool then top with jam and dust with icing sugar (optional) to serve.
